Never compost meat, fish, dairy, oils, or pet waste, as these attract pests or introduce pathogens. Also avoid diseased plants, since the compost pile may not reach temperatures high enough to kill disease organisms.

When starting a new bin, layer materials like you're making a lasagna. Begin with a 4-inch layer of browns, then add a 1-inch layer of greens, and repeat until your bin is full or you run out of materials. Water each layer lightly—materials should feel like a wrung-out sponge, not soggy. After a few days, your pile will begin heating up as microorganisms become active. Temperature can reach 130 to 150 degrees Fahrenheit in an active pile.

Turning your pile (mixing the materials) speeds up decomposition because it introduces oxygen throughout the pile. If your bin has a door at the bottom, you can pull out material and pile it back on top. If you have a tumbling bin, rotate it every few days. For fixed bins, use a garden fork to mix materials. You don't need to turn your pile—passive composting without turning takes 6 to 12 months instead of 2 to 4 months, but it requires less physical effort. Many beginning composters prefer passive piles until they're comfortable with the process.

Temperature tells you how active your pile is. A compost thermometer (available at garden centers for $10-$25) measures internal temperature. If it stays around room temperature, your pile needs more greens, more moisture, or better aeration. If it's heating up nicely, your microorganisms are thriving. In winter, piles slow down or stop decomposing in cold climates, but this is normal.
