Some home butter-makers specifically seek out non-homogenized milk or cream because the larger fat globules can make churning slightly faster.

If you're using a blender: Pour heavy cream into the blender until it's about one-third full (don't fill it more than halfway). Blend on high speed. Watch through the blender's clear container. Within 2 to 3 minutes, you'll see the cream become whipped cream. Continue blending. Around 5 minutes, the mixture will suddenly separate into a yellowish clump of butter and whitish buttermilk. Stop the blender immediately once this separation occurs—continuing to blend can make the butter greasy.
