Rubber gaskets are used in older style canning jars (like old-fashioned glass-topped jars). If you are using these vintage jars, follow the manufacturer's instructions for preparing the rubber gaskets, as practices may vary. Modern Mason jars and Ball jars use the two-piece lid system, which is simpler to prepare.
