This butter creates the signature flaky layers that make croissants distinctive. The dough itself, called détrempe, is relatively simple: flour, water, salt, yeast, and a small amount of butter mixed together. What makes croissants special is what happens next: lamination, the process of folding butter into the dough repeatedly to create hundreds of thin, alternating layers of dough and butter.

The science of lamination relies on gluten development and precise temperature control. When you fold butter into dough, the gluten strands create walls that separate the butter from the dough. As the croissant bakes, water in the dough turns to steam, which pushes the layers apart. The butter melts and prevents the layers from sticking back together, creating those characteristic flaky, hollow interiors. Temperature is critical because butter has a very specific melting point. If the dough gets too warm during folding, the butter will melt unevenly into the dough instead of creating distinct layers. If it's too cold, the butter will crack and break rather than fold smoothly.

Home bakers often struggle with croissants because the process takes time and demands attention to temperature. Professional bakeries use refrigerated work surfaces and climate-controlled environments, but home kitchens can still produce excellent croissants with awareness and planning. The fermentation process is slower and more forgiving than many assume—croissants can be made over two to three days, with much of that time involving passive resting in the refrigerator.

Filtered or tap water works fine, though some bakers prefer filtered water to avoid chlorine, which can affect gluten development. Use active dry yeast or instant yeast—both work equally well. Fresh yeast can be used but requires adjustment (use about 1.5 times the weight). Salt should be fine sea salt or kosher salt; iodized table salt works but may impart a slightly different flavor.

A typical croissant dough for about 16 medium croissants uses roughly 500g bread flour, 280ml water, 60g butter (for the detrempe), 10g salt, and 5g instant yeast. The laminating butter—the larger amount folded in—weighs about 400-450g. Before starting, measure all ingredients by weight using a kitchen scale. Volume measurements (cups, tablespoons) introduce too much variability for a finicky dough like croissant.

Using a rolling pin, create a rectangle roughly 20cm x 30cm (8" x 12"). The goal is to make a shape that accommodates folding. Take your laminating butter (400-450g) and pound it slightly to soften it to the same consistency as the dough—firm but pliable. Place the butter in the center of the dough rectangle, leaving a small border of dough on all sides. Fold the dough edges up and around the butter so the butter is completely enclosed.

Once butter is enclosed, gently roll the dough into a rectangle approximately 20cm x 60cm (8" x 24"). This is the first "turn" or "fold." Fold the rectangle into thirds like a business letter: fold the bottom third up, then fold the top third down. Rotate the dough 90 degrees, wrap it in plastic, and refrigerate for 20-30 minutes. Repeat this folding process four to six times total, refrigerating between each fold. Most bakers do three folds, refrigerate for 1-2 hours, then do two more folds. After the final fold, refrigerate for at least 2-4 hours, preferably overnight, before shaping.

Temperature control during lamination cannot be overstated. If the dough warms too much, the butter will begin melting into it. If it's too cold, the butter will crack when you roll. Ideally, work in a cool kitchen or on a chilled surface. Some bakers refrigerate their rolling pin and work surface. If the dough becomes too warm during folding, stop, wrap it, and refrigerate for 15-20 minutes.

To shape a croissant, place a triangle of dough with the base toward you. Starting at the base, gently roll the dough toward the point, creating a tight roll. As you reach the end, the point should tuck underneath slightly. Curve the two ends of the roll slightly inward so it forms a crescent shape. This shaping is where experience helps—rolling too tightly restricts expansion, while rolling too loosely results in a loaf-like shape rather than a flaky pastry. Most of the shaping should be gentle stretching rather than aggressive rolling.
