The surface of cast iron develops a layer called seasoning over time. This is not a coating you apply and then leave alone—it's a buildup of polymerized oil that creates a naturally non-stick surface. The more you cook with cast iron, the better this seasoning becomes. Heavily rusted pans can also be restored using a soak in white vinegar. Place the pan in a bathtub or large container and cover it with white vinegar for 1-8 hours, depending on rust severity. The vinegar dissolves rust. After soaking, scrub away remaining rust with steel wool, rinse, and dry thoroughly. This method works well but requires access to space for soaking.
Prevention is simpler than restoration. Always dry cast iron immediately after washing. Store it in a dry location. Apply a thin layer of oil before storing for extended periods. If you live in a very humid climate, occasional light oiling of stored pans prevents rust development.
