A vertical smokehouse is tall and narrow, which makes efficient use of space and allows smoke to rise naturally through the chamber. A horizontal smokehouse is wider and longer, giving you more cooking surface area. A drum smoker is built from a steel drum and is portable and affordable. An offset firebox smoker has a separate chamber where the fire burns, and smoke travels into the cooking chamber, which gives you better temperature control. A pit smoker is dug into the ground and uses the earth for insulation.

The size of your smokehouse depends on how much food you want to cook at once and how much space you have available. Small smokehouses can handle 20 to 50 pounds of meat, while larger ones can accommodate several hundred pounds. Consider whether you want to smoke small batches regularly or larger quantities less often.

The drum should be clean and food-safe. For a brick or block smokehouse, you will need cinder blocks or brick, mortar, sand, metal grating, and concrete for the foundation.

Essential tools for construction include a drill, saw, level, measuring tape, wrench set, thermometer, metal file, wire brush, and safety equipment like gloves and eye protection. If building a permanent structure, you may want a concrete mixer and shovel for foundation work.

The materials cost for a basic drum smoker ranges from $150 to $400, depending on the quality of grates and thermometers. A brick smokehouse can cost $500 to $2,000 depending on size and whether you do the work yourself. Horizontal barrel smokers typically cost $300 to $800 in materials.

A sloped surface makes it difficult to keep food level during cooking and can cause smoke to escape unevenly. Check that the area gets some shade during the hottest part of the day if you live in a very hot climate, as this helps maintain consistent smoking temperatures.

Prepare the foundation based on your smokehouse type. For a permanent brick or block structure, pour a concrete foundation 12 inches deep and 4 inches thick. Dig the holes for foundation posts if using a wooden frame. For a drum smoker, create a level pad from gravel or concrete. If building in clay or wet soil, add gravel underneath to improve drainage.

Consider wind direction and prevailing breezes when positioning your smokehouse. If wind consistently blows from one direction, position the intake vents on that side so wind naturally draws smoke through the chamber. This reduces the amount of fuel needed and improves smoke distribution.

Building the Smokehouse Structure

Clean it thoroughly inside and out with a wire brush to remove rust and debris. If the drum has a lid, keep it. If not, you can fabricate one from sheet metal. Cut a door opening on one side, large enough to load meat comfortably but small enough to maintain temperature. The door should be about 12 by 14 inches. Use a metal file to smooth the cut edges.

Install the grates inside the drum. Most people install two or three grates spaced 8 to 10 inches apart. Support the grates on metal rods welded or bolted to the drum interior, or use adjustable grate hangers. Grates should be sturdy enough to hold 50 pounds of meat without bending. Mount a thermometer through the drum wall at the level of the top grate so you can read the temperature from outside.

Create the firebox chamber below the lowest grate. You can build this by installing a metal box on the bottom of the drum, or by creating a chamber from the drum itself if you keep the bottom intact. Install a metal pipe or tube to carry smoke from the firebox to the cooking chamber. Make sure this pipe slopes slightly upward so condensation drains back toward the firebox.

For a brick or block smokehouse, lay the foundation, then begin stacking blocks or brick with mortar. Leave small gaps (called flues) between some blocks to allow smoke to rise naturally. Build the walls 6 feet tall for comfortable working height. Install a grate or metal platform inside to hold food. Build a peaked roof to shed water, and install a chimney opening at the top.

The intake vents should be near the bottom or firebox area, and the exhaust vent should be at the top of the chamber or chimney. This creates natural airflow called a draft.

Dampers are doors or valves that control how much air flows through the vents. An intake damper near the firebox controls how fast the wood burns and how much heat the fire produces. An exhaust damper at the top controls how much smoke and heat leave the chamber. By adjusting these dampers, you control the internal temperature. Most smokers can reach 225 to 275 degrees Fahrenheit with proper damper adjustment.

Install dampers that are easy to reach and adjust while smoking. Butterfly dampers (round discs that rotate) are simple and effective. Ball valve dampers work well but cost more. Make sure damper openings are at least 2 inches in diameter so you have enough airflow for the fire to burn properly. If vents are too small, the fire smolders and produces too much acrid smoke.
